It is the most famous Lithuanian dish. It would be a sin not to try cepelinai at least one time if you are in Lithuania. Hostess in Lithuania often entertain their respectable guests with cepelinai as it is delicious, specific and cooking experience requiring dish. The variety of sauces and fillings is quite wide thus each cook decides differently according to his or her experience and taste. The most popular receipt is cepelinai with forcemeat. In this way cepelinai are very filling and the taste is probably the best of all possible variety.

Ingredients for 5 portions

12 raw potatoes
3 boiled potatoes
500 g forcemeat  (beaf or pork)
2 onions
2 tablespoons melted pig fat
sour cream to taste
black ground peppers to taste
salt to taste


• Pear off potatoes, grate them and rack. Do not pour off the liquid, wait until starch sets in. Then pour off the liquid, put starch and mashed boiled potatoes into grated potatoes. Salt and brake well the mash.
• Ready the filling. Sauté 1 chopped onion, flavor it with salt and peppers. Pour everything into forcemeat and cream well.
• Form patties from  about 80g potatoes mash, spread them well and put on approximately  1 tablespoon filling each. Double over every filled patty, strangulate ribs well and form oblong dumplings.
• Put the dumplings into boiling salted water and boil for 20-25 minutes slightly and carefully stirring.
• Take out the dumplings and put them into warm bowl. Slop them over with sauté onions, greaves and sour cream.
